In anticipation of her cookbook A Girl And Her Greens, we made this piece for T Style about chef April Bloomfield's approach to vegetables. Bloomfield, who won the James Beard Award for Best Chef in New York City, is known primarily for her meat-centric cooking styles at The Spotted Pig, The Breslin, and The John Dory. But her views on vegetables are no less scrupulous -- and she really knows how to attack an artichoke.
